Hey friends! This week was a bit of a nuts one for me. I took on a major client for work and I finally feel like I’ve come up for air. My husband and I are off on our annual camping trip, so I’m wholeheartedly embracing that no-service life up in the Finger Lakes for the next few days.
I figured this week I would take a little break and instead, have you create the content! Tell me, what’s your favorite recipe to cook right now? The one you keep going to over and over because it’s just that good? Or maybe it’s a tried-and-true you’ve been cooking for years!
Share it in the comment thread here, and I’ll choose my favorite to feature in this newsletter!
This is our first comment thread for Forkful, so for many of you, this might be new. All you have to do is click this button below and it will take you to the webpage version of this post. You’ll comment there and I’ll read your responses throughout the week and choose my favorites! Feel free to also interact with each other and get to know your fellow readers. :)
If anything, I hope all of the yummy recipes inspire your cooking this fall. I’m always looking for new meals to dig my fork into (ha, get it), so I can’t wait to try yours!
I’ll start! I’m still having a major obsession with this creamy vegan pizza sauce. I use a pre made chickpea crust, top with sauce, and then add lots of veggies with a drizzle of garlic-infused olive oil. https://www.kierstenhickman.com/creamy-vegan-pizza-sauce-recipe/

Here are a couple I've found that my entire family of 5 loves and that I make over and over again:
1. https://therealfooddietitians.com/sheet-pan-chipotle-chicken-thighs/ - I vary the spices and veggies but the OG recipe is great
2. https://www.recipetineats.com/classic-italian-meatballs-extra-soft-and-juicy/ - These meatballs and sauce are so good, and I am not a big fan of either. It's an uncomplicated recipe and I am using her technique of grating onion and soaking bread crumbs/bread in the grated onion and juices from now on.
3. This is so simple and easy and you can use pre-shredded rotisserie chicken if your grocery store deli sells it - https://thebricolab.com/2017/06/27/comfort-me-with-casserole/
